Roghan Josh
Ingredients: Serves 4-6
- 1 Kg Chicken / Lamb / Goat (preferably curry pieces with bones).
- 1 Pack BombaySpices ROGHAN JOSH Spice Mix (Add water to make paste).
- 3 Large onions finely chopped (preferably red onions).
- 1 tbsp ginger garlic paste.
- 3/4 cup thick yogurt (whisked with no lump).
- 1/2 cup ghee (clarified butter) . You can cook it in oil as well.
- 1 tsp salt (You can adjust according to your taste).
- Few strands of saffron soaked in 1/4 cup warm milk.
Method:
- Heat ghee/oil in a heavy bottom pan.
- Add the chopped onions and sauté until dark pink.
- Now add the ginger garlic paste and sauté for 2 minutes.
- Add the Roghan Josh paste.
- Add 1/2 cup water and let it cook until oil separates.
- Now add the chicken/lamb/goat and salt and combine well.
- Cook until the meat is tender and done.
- Add the whisked yogurt and combine well.
- Cook until bubble appears.
- Lastly, add the warm milk with saffron and cook for 2 minutes or until a bubble appears.
- Serve hot with naan, roti, or rice.
