Baingan Masala( Indian Style Eggplant Recipe)
Ingredients: Serves 4
- 2 Eggplants (Approximately 6000gms)
- 1 Large onion finely chopped
- 2 Tomatoes puréed
- 1 tbsp finely chopped fresh ginger (optional, don't stress if you don't have handy)
- 1 Pack BombaySpices BAINGAN MASALA
- 1+1 Cup Oil
- Juice of half a lemon
- Salt to taste (I used 1 tsp)
Method:
- Heat oil in a heavy bottom pan.
- Cut the eggplant in lengthwise and half it.
- Fry the eggplant slices on both sides in 1 cup oil and keep aside.
- Add another cup of oil to the same pan.
- Add chopped ginger and sauté for 2 minutes.
- Now add chopped onions and sauté until light pink.
- Add the puréed tomatoes now.
- Add 1 pack of BombaySpices Baingan Masala.
- Combine well and cook until oil separates.
- Now add salt and transfer the fried eggplant slices and combine well.
- Cover and cook for 10 minutes.
- Lastly, add lemon juice.
- Serve hot with steamed rice or roti.
